CHOCOLATE CHIP COOKIES

Here's a really easy recipe for gorgeous chocolate chip cookies. When you want a quick snack these are great. You can whip up a batch of cookie dough any time and just keep some in the fridge or freezer to take out and bake whenever you want. 10 minutes later and BAM! You have yourself some freshly baked cookies and an amazing smell wafting through your home.

Ingredients:
100g granulated sugar
165g brown sugar
115g melted butter (unsalted)
1 egg
155g plain flour
1 tsp sea salt
1 tsp vanilla extract/paste
1/2 tsp baking powder
200g chocolate chunks (we love our chocolate orange bar or our maple and pecan bar with our 72% dark bar chopped and mixed together. 

 

Method:
Whisk the sugars, butter and salt together in a mixing bowl to make a paste. Whisk in the egg and vanilla until the mixture thickens a little. Sieve the flour and baking powder in and fold into the mixture - do not over mix. Gently mix in the chocolate chunks. Cover and refrigerate for at least half an hour) but preferably over night to let the flavours really sing!)

Preheat your oven to 180 degrees and line a baking tray with non stick parchment. Roll your cookie dough into balls (the size of golf balls). Bake for about 10 minutes or until the edges are JUST starting to turn golden, then leave to cool completely.

Tip: If you're not baking all your cookie dough at once, roll all of the dough into balls and pop into an airtight container to refrigerate or freeze.
